  • 2 large eggs
  • 1/2 cup vegetable oil
  • 8 oz cream cheese (room temperature)
  • 1/4 cup granulated sugar (for cream cheese swirl)
  • 1 large egg yolk (for cream cheese swirl)
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat oven to 375°F and line muffin pan with paper cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt.
  3. In a large bowl, combine pumpkin puree, sugars, eggs, oil, and vanilla until mixed well. Gradually add dry ingredients until combined.
  4. In another bowl, beat cream cheese until smooth, then mix in sugar, egg yolk, and vanilla until well blended.
