  • 1 cup Panko bread crumbs

  • Salt and pepper (to taste)
  • 3 tablespoons canola oil (for cooking)

  1. Grate the zucchini using a box grater and squeeze out excess moisture using a mesh bag or cheesecloth.
  2. In a mixing bowl, combine squeezed zucchini with Panko bread crumbs, eggs, Parmesan cheese, Mozzarella cheese, minced garlic, salt, and pepper. Mix until well combined.
