  • 1 teaspoon apple cider vinegar
  • 210g self-raising flour
  • 50g cocoa powder
  • 100g caster sugar
  • 60ml sunflower oil
  • 210g dairy-free block butter (for frosting)
  • 200g icing sugar
  • 20ml aquafaba (chickpea brine)
  • Oreo cookies (for decoration)

Instructions

  1. Preheat oven to 180°C (350°F) and line a cupcake tin with liners.
  2. Combine dairy-free milk and apple cider vinegar in a bowl; let sit for 5-10 minutes.
  3. In another bowl, mix self-raising flour, cocoa powder, caster sugar, baking powder, and bicarbonate of soda.
  4. Stir sunflower oil into the dairy-free buttermilk mixture.
  5. Combine wet and dry ingredients until just mixed; fill cupcake liners two-thirds full.
  6. Bake for 15-20 minutes until a toothpick comes out clean.
  7. For frosting, beat together dairy-free butter and icing sugar; gradually add aquafaba.
  8. Cool cupcakes completely before frosting; decorate with melted dairy-free chocolate, Oreo cookies, and white chocolate buttons.
