  • 2 medium zucchini (cubed)
  • 4 fully cooked sausages (sliced into circles)
  • 1 onion (cut into pieces)
  • 1 bell pepper (any color, cut into pieces)
  • Olive or avocado oil
  • Garlic (minced)
  • ¼ tsp garlic powder
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ¼ tsp onion powder
  • ¼ tsp pepper
  • ½ tsp salt

Instructions

  1. Heat 1 tbsp of oil in a skillet over medium-high heat.
  2. Add the sausage and sauté until browned; remove from pan.
  3. Reduce heat to medium; add remaining oil along with zucchini, onion, and bell pepper. Sprinkle with seasonings and stir well.
  4. Cook until vegetables are tender (about 5 minutes).
  5. Return sausage to the skillet along with minced garlic; stir to combine and cover for a few minutes.
