  • 2 cups fresh baby spinach
  • ½ cup heavy cream

  • 1 tablespoon tomato paste
  • 1 teaspoon Italian seasoning
  • ½ teaspoon crushed red pepper
  • ½ teaspoon black pepper

Instructions

  1. In a Dutch oven over medium-high heat, cook the sausage until browned. Use a wooden spoon to break it up (10–15 minutes).
  2. Add onions, celery, and carrots; sauté until softened (3–5 minutes). Stir in garlic and cook for an additional minute.
  3. Mix in tomato paste, Italian seasoning, crushed red pepper, and black pepper.
  4. Pour in chicken broth and add the beans; bring to a simmer for about 6–7 minutes.
  5. Stir in heavy cream and spinach; cook until the spinach wilts (about 5 minutes).
  6. Serve warm, garnished with chopped parsley.
