  • 2-inch piece fresh ginger, minced
  • 2 serrano peppers, minced
  • 1 can full-fat coconut milk
  • 1 can crushed tomatoes
  • 1 tsp ground cumin
  • 1 tsp cayenne pepper
  • ½ tsp ground coriander
  • 2 tsp curry powder
  • 1 tsp garam masala
  • 1 tsp ground turmeric
  • 1 tsp kosher salt, use more as needed
  • 1 tsp freshly cracked black pepper
  • 1 tbsp lemon juice
  • ½ cup fresh cilantro, roughly chopped

Instructions

  1. Rinse the lentils under cold water until clear. Soak for at least 6 hours or overnight.
  2. Heat oil in a large skillet over medium-high heat; sauté garlic, ginger, and serrano peppers for 3 minutes.
  3. Add spices and cook for another 30-60 seconds until fragrant.
  4. Stir in the soaked lentils, crushed tomatoes, and coconut milk; reduce heat to low and simmer for 20-25 minutes until lentils are tender.
  5. Stir in lemon juice and chopped cilantro before serving warm with rice or flatbread.
