  • 3 tbsp extra virgin olive oil
  • 1 yellow onion
  • 4 garlic cloves
  • 1 cup fresh basil
  • 2 cups chicken stock
  • 2/3 cup heavy cream

Instructions

  1. Preheat oven to 375°F.
  2. Slice tomatoes in half, place on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 1 hour.
  3. In a large pot, heat olive oil or butter over medium-high heat and sauté diced onion until translucent (about 5 minutes).
  4. Add minced garlic and thyme; sauté until fragrant (about 1 minute).
  5. Stir in crushed tomatoes and sugar; simmer for 10 minutes.
  6. Add roasted tomatoes and chicken stock; simmer for another 30 minutes.
  7. Blend the soup until smooth using an immersion blender, then stir in heavy cream.
  8. Serve hot, optionally topped with mini croutons.
