  • 1 2/3 cups sugar
  • 1 cup vegetable oil
  • 15 oz. can pumpkin puree
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp salt
  • 1 tsp baking soda
  • 1/2 cup butter, softened at room temperature
  • 8 oz. package cream cheese
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a stand mixer, beat together eggs, sugar, vegetable oil, and pumpkin until smooth.
  3. In another bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  4. Gradually mix dry ingredients into the wet mixture until just combined.
  5. Spread batter evenly in the prepared dish and bake for about 30 minutes or until a toothpick comes out clean.
  6. Allow bars to cool completely before frosting with cream cheese icing made by mixing softened butter, cream cheese, powdered sugar, and vanilla extract.
