  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • Lime zest from 1 lime
  • Chili powder
  • Cumin
  • Smoked paprika
  • Onion powder
  • Garlic powder
  • Salt
  • Pepper
  • Ripe avocados
  • Cherry tomatoes
  • Red onion
  • Jalapeno pepper
  • Fresh corn

Instructions

  1. Prepare the marinade by whisking together olive oil, lime juice, lime zest, chili powder, brown sugar, salt, cumin, smoked paprika, onion powder, garlic powder, chipotle chili powder (if desired), and pepper in a mixing bowl.
  2. Marinate the chicken in the mixture for at least 30 minutes or up to overnight in the refrigerator.
  3. Preheat your grill or grill pan over medium-high heat. Grill the chicken for about 5–7 minutes per side until cooked through (internal temperature should reach 165°F).
  4. While the chicken cooks, prepare the avocado salsa by combining chopped avocados, cherry tomatoes or Roma tomatoes, corn kernels, red onion, jalapeno (if using), cilantro, minced garlic or garlic powder, lime juice, cumin, salt, and pepper in a bowl.
  5. Serve the grilled chicken topped with generous spoonfuls of avocado salsa.
