  • ¾ cup whole wheat or gluten-free flour
  • 1 ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tbsp coconut oil or unsalted butter
  • 1 large egg
  • 1 tsp almond extract
  • ¼ cup pure maple syrup
  • 6 tbsp unsweetened vanilla almond milk
  • ½ cup diced peaches

Instructions

  1. In a bowl, whisk together oats, flour, spices, baking powder, and salt.
  2. In another bowl, mix melted coconut oil or butter, egg, almond extract, maple syrup, and almond milk.
  3. Combine wet and dry ingredients until just mixed; fold in peaches.
  4. Chill dough for 30 minutes.
  5. Preheat oven to 325°F (165°C) and line a baking sheet.
  6. Drop rounded scoops onto the sheet, flatten slightly, and bake for 9–12 minutes.
