  • 1.5 lbs salmon fillets (cut into 1-inch squares)
  • 2 large lemons (thinly sliced)
  • 2 Tbsp fresh parsley (chopped)
  • 23 garlic cloves (pressed)
  • 0.5 Tbsp Dijon mustard
  • 0.5 tsp salt
  • 0.125 tsp ground black pepper
  • 2 Tbsp light olive oil
  • 2 Tbsp fresh lemon juice

Instructions

  1. Soak bamboo skewers in water for at least 1 hour.
  2. Preheat your grill to medium heat (375˚F).
  3. In a medium bowl, combine parsley, garlic, Dijon mustard, salt, pepper, olive oil, and lemon juice to make the marinade.
  4. Thread salmon pieces and lemon slices onto double skewers for easy flipping.
  5. Brush both sides of the skewered salmon with the marinade.
  6. Oil the grill grates to prevent sticking and then grill the skewers for about 3-4 minutes per side until cooked through.
