  • 64 ounces chicken stock
  • 1 large head of garlic
  • small bunch fresh sage
  • 2/3 cup olive oil (or preferred vegetable oil)
  • 1 large egg (separated)
  • 1 teaspoon Dijon mustard
  • pinch of salt

Instructions

  1. Heat chicken stock and sage in a large Dutch oven until gently simmering.
  2. Peel and halve garlic cloves, discarding any bitter shoots.
  3. Boil garlic in a small saucepan for 3-4 minutes, then drain.
  4. Mash boiled garlic and add to the simmering stock; cook for another 10 minutes.
  5. For mayonnaise, blend egg yolk, mustard, salt, and oil in a jar using an immersion blender until emulsified.
  6. Optionally strain the soup for a smoother texture.
  7. Combine a ladle of hot soup with mayonnaise to temper it before mixing back into the pot.
  8. Heat gently without boiling; serve warm with toppings like croutons, smoked paprika, and parsley.
