  • 1 pound boneless skinless chicken breasts
  • 2 tablespoons canola oil
  • Zest and juice of 1 large lime
  • 1 tablespoon chili powder
  • 1 ½ teaspoons ground cumin
  • 1 clove garlic (chopped)
  • 1 jalapeño (chopped)
  • 1 large red bell pepper
  • 1 large green bell pepper
  • 1 large red onion

Instructions

  1. Cut the chicken into bite-sized pieces and place in a zip-top bag.
  2. In a bowl, whisk together canola oil, lime zest and juice, chili powder, cumin, garlic, jalapeño, and salt. Pour over chicken in the bag, seal tightly, and marinate for at least 30 minutes.
  3. Preheat grill to medium-high. If using wooden skewers, soak them in water for at least 20 minutes.
  4. Cut vegetables into chunks and thread onto skewers alternating with marinated chicken pieces.
  5. Grill kebabs for about 6 to 8 minutes, turning occasionally until fully cooked.
  6. Serve warm garnished with fresh cilantro and additional lime juice.
