  • 1/2 medium onion (chopped)
  • 1 pound ground turkey
  • 2 heaping tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 1 (14-ounce) can red kidney beans (drained)
  • 2 (10.5-ounce) cans Rotel Diced Tomatoes & Green Chilies (with juices)
  • 1/2 cup water or chicken broth
  • Salt & pepper (to taste)
  • Optional toppings like shredded cheddar, cilantro, sour cream, corn chips/strips, scallions or red onions, avocado

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat; sauté chopped onion until softened (about 5 minutes).
  2. Add ground turkey, cooking until browned (about 5 minutes).
  3. Stir in tomato paste, chili powder, garlic powder, cumin, smoked paprika, and cayenne pepper until well mixed.
  4. Incorporate drained red kidney beans and diced tomatoes with their juices; add chicken broth or water. Bring to a boil, then reduce heat and simmer for 15–20 minutes.
  5. Season with salt and pepper to taste. Serve hot with your choice of toppings.
