  • 1/4 tsp ground ginger
  • 2 cups granulated sugar
  • 1/2 cup brown sugar
  • 1 cup canola oil
  • 4 large eggs
  • 1 can (15 oz) pumpkin puree
  • 2/3 cup water
  • 1 tsp vanilla extract
  • 1/2 cup cold butter
  • 3/4 cup all-purpose flour
  • 1 tsp ground cinnamon

Instructions

  1. Preheat your oven to 350°F and prepare two 8×4 bread pans by lining them with parchment paper.
  2. In a large mixing bowl, whisk together flour, salt, baking soda, and spices.
  3. Stir in both sugars until well combined.
  4. Make a well in the center; add oil and mix until just combined. Add eggs two at a time, mixing after each addition. Then add pumpkin puree, water, and vanilla extract until smooth.
  5. Divide the batter between prepared pans.
  6. For the crumb topping: Combine flour, brown sugar, and cinnamon; cut in cold butter until crumbly.
  7. Sprinkle topping over the batter and bake for 55-65 minutes or until a cake tester comes out clean.
  8. Allow to cool for about 10 minutes before transferring to wire racks.
