  • 1 teaspoon kosher salt
  • ½ teaspoon coarsely ground black pepper
  • 2 tablespoons gluten-free all-purpose flour
  • 2 tablespoons olive oil
  • ½ yellow onion (chopped)
  • 4 garlic cloves (minced)
  • 1 large carrot (cut into 2-inch chunks)
  • 2 Yukon Gold potatoes (diced)
  • 2 cups beef broth
  • ¼ cup tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf
  • 2 teaspoons fresh thyme leaves (for garnish)

Instructions

  1. Preheat the oven to 325°F.
  2. Season beef with salt and pepper; coat with flour.
  3. Heat olive oil in a large Dutch oven over medium heat. Brown the beef in batches for about 3-4 minutes per side, then transfer to a plate.
  4. In the same pot, sauté onion, garlic, and carrot for about 2-3 minutes until lightly browned.
  5. Add potatoes, broth, tomato paste, Worcestershire sauce, bay leaf, and thyme; stir to combine and scrape up browned bits.
  6. Return the beef to the pot, bring to a simmer, cover with a lid, and transfer to the oven.
  7. Cook for about 2 to 2.5 hours until the beef is tender. Remove the bay leaf before serving.
