  • 1/2 cup brown sugar
  • 2 eggs
  • 1/2 cup sugar
  • 1/2 cup almond milk
  • 1 teaspoon vanilla extract
  • 3/4 cup packed brown sugar (for icing)
  • 1/4 cup almond milk (for icing)
  • 1 tablespoon dairy-free butter (for icing)
  • 1/2 teaspoon vanilla extract (for icing)
  • 1 and 1/2 cups powdered sugar (for icing)
  • pinch of sea salt (for icing)

Instructions

  1. Preheat the oven to 350°F and grease two donut pans.
  2. In a large bowl, whisk together the dry ingredients: gluten-free flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and sea salt.
  3. In another bowl, combine the wet ingredients: pumpkin puree, avocado oil (or melted coconut oil), brown sugar, sugar, eggs, almond milk, and vanilla extract.
  4. Mix the wet ingredients into the dry mixture until just combined.
  5. Pipe the batter into the donut pans until about 3/4 full. Bake for 11-12 minutes until golden brown.
  6. Let cool for a few minutes before transferring to a wire rack.
