  • 1/2 cup dill pickle juice
  • 1 cup cheddar cheese (diced)
  • 1 cup sliced dill pickles
  • 3 tablespoons fresh dill (chopped)
  • 2/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1/4 teaspoon Sriracha (optional)

Instructions

  1. Cook the elbow pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. In a mixing bowl, combine the cooked pasta with 1/2 cup dill pickle juice and marinate for 5 minutes before draining excess liquid.
  3. In another bowl, mix together mayonnaise, sour cream, an additional 1/4 cup dill pickle juice, Sriracha, salt, and pepper until smooth.
  4. In a large serving bowl, combine marinated pasta, diced cheddar cheese, sliced pickles, chopped fresh dill, and onion. Toss with the creamy dressing until evenly coated.
  5. Refrigerate for at least 4 hours before serving to allow flavors to meld.
