  • 2 pounds shrimp (peeled and deveined)
  • 1 English cucumber (small diced)
  • 3 green onions (thinly sliced)
  • ⅓ cup mayonnaise
  • ⅓ cup sour cream
  • Juice and zest of 1 large lime
  • 2 tablespoons fresh dill (chopped)
  • 1 tablespoon Dijon mustard
  • 1 garlic clove (minced)
  • Salt to taste

Instructions

  1. In a mixing bowl, combine mayonnaise, sour cream, lime zest and juice, dill, mustard, garlic, and salt. Mix well and set aside.
  2. Bring a large pot of water to boil. Add shrimp and cook for 2 to 3 minutes until pink and opaque.
  3. Prepare an ice water bath in a large bowl. Transfer cooked shrimp to the ice bath to cool for about 3 minutes before draining.
  4. Chop cooled shrimp into bite-sized pieces and add them to the dressing along with diced cucumber and sliced green onions. Toss gently until evenly coated.
