  • 500g potatoes
  • 250350ml vegetable broth
  • 60ml soy or oat cream
  • 3 tbsp nutritional yeast
  • Olive oil
  • Sea salt

  1. Preheat the oven to 400°F (200°C). Roast garlic in olive oil for about 20 minutes until golden.
  2. While garlic roasts, peel and cube potatoes; boil in water until tender (about 15 minutes).
  3. Drain potatoes, then blend with roasted garlic, vegetable broth, cream, nutritional yeast, and seasonings until smooth.
  4. For croutons, cube old bread, toss with olive oil and bake until golden (about 10 minutes at 400°F/200°C).
