  • ½ teaspoon nutmeg
  • Salt and black pepper to taste
  • 1/3 cup hard cheese (e.g., Polish Bursztyn or Parmesan)

Instructions

  1. Peel and chop the onion, carrots, and potatoes.
  2. In a pot over medium-low heat, melt butter and sauté the onion until translucent.
  3. Add diced potatoes and grated carrot; cook for another 2-3 minutes.
  4. Pour in stock, bring to a simmer, cover partially, and cook for about 20 minutes until potatoes are tender.
  5. Blend a cup of hot soup with cream until smooth; return to pot.
  6. Stir in chopped dill and season with lemon juice, nutmeg, salt, and pepper.
  7. Cook for an additional 3-4 minutes before serving.
