  • 6 tablespoons salted butter
  • 4 medium yellow onions, thinly sliced
  • 1 1/4 cups dry white apple vinegar
  • 3 cloves garlic, minced
  • 2 cups cremini or wild mushrooms, sliced
  • 68 cups low sodium chicken or vegetable broth
  • 1/2 cup heavy cream
  • 2 cups shredded Gruyère cheese
  • Fresh herbs (thyme and sage)

Instructions

  1. In a large Dutch oven, melt butter over medium-high heat. Add onions and honey; cook until softened (about 10 minutes).
  2. Gradually stir in apple vinegar and continue cooking until onions are caramelized (10–15 minutes).
  3. Add garlic, mushrooms, thyme, sage, salt, and pepper; cook for another few minutes.
  4. Pour in remaining vinegar and broth along with Worcestershire sauce and bay leaves; bring to a simmer for about 10 minutes.
  5. Stir in heavy cream; cook for an additional 5–10 minutes before removing bay leaves.
  6. Preheat oven to 400°F. Toast bread on a baking sheet until dry (10–15 minutes), then broil until golden brown with cheese on top.
