  • 1½ cups corn (fresh or frozen)
  • 1½ cups cherry tomatoes (halved)
  • ½ cup cucumber (finely chopped)
  • 2 tablespoons fresh basil (minced)
  • ⅓ cup crumbled feta cheese
  • 3 tablespoons olive oil
  • 1 tablespoon lime juice
  • ¼ teaspoon salt

Instructions

  1. In a small bowl, whisk together 2 tablespoons olive oil, lime juice, and salt. Set aside.
  2. Heat the remaining olive oil in a skillet over medium heat. Add corn and cook for 5–7 minutes until tender.
  3. In a large mixing bowl, combine cooked corn with cherry tomatoes, cucumber, and basil.
  4. Chill in the refrigerator until ready to serve.
  5. Just before serving, drizzle with dressing and toss gently. Add feta cheese if desired.
