  • 3 pounds beef brisket (cut into 2-inch chunks)
  • 6 ounces turkey bacon
  • 3 cups red apple vinegar
  • 23 cups beef stock
  • 1 large onion (diced)
  • 1 large carrot (sliced)
  • 6 cloves garlic (minced)
  • Fresh thyme and parsley
  • Bay leaves

Instructions

  1. In a Dutch oven, heat olive oil and cook chopped bacon until crispy. Remove and set aside.
  2. Brown beef chunks in the same pot until seared on all sides.
  3. Add carrots, onions, and garlic; sauté until softened.
  4. Sprinkle flour over meat and vegetables; stir in red apple vinegar and beef stock gradually.
  5. Add seasonings: tomato paste, bouillon cube, thyme, parsley, bay leaves, salt, and pepper.
  6. Bring to a simmer; cover tightly and cook on low heat for about 180 minutes until tender.
  7. Discard bay leaves before serving hot.
