  • 12 oz Brussels sprouts (trimmed and halved)
  • 12 oz cooked sausage (such as cajun or smoked)
  • 3 tablespoons olive oil
  • Salt and pepper

  • Fresh thyme (to taste)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss butternut squash with 1 tablespoon olive oil, salt, and pepper; spread on a baking sheet.
  3. Roast for 20 minutes until tender.
  4. While roasting, toss Brussels sprouts with 2 tablespoons olive oil, salt, and pepper.
  5. After 20 minutes, add Brussels sprouts and sausage to the baking sheet; drizzle with olive oil and seasonings if desired.
  6. Roast for an additional 20 minutes until everything is golden brown.
