  • 12 oz Brussels sprouts
  • 8 oz bow tie pasta
  • 12 oz cooked smoked sausage (cajun or andouille)
  • 5 cloves garlic (minced)
  • 1 tablespoon olive oil
  • 2 tablespoons olive oil (for Brussels sprouts)
  • 1 tablespoon olive oil (for pasta)
  • Salt and pepper (to taste)
  • 1/4 teaspoon smoked paprika (to taste)
  • Fresh thyme (to taste)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss butternut squash with olive oil, salt, and pepper; roast on a baking sheet for 25 minutes.
  3. Prepare Brussels sprouts by halving them and tossing in olive oil; add to the oven after 15 minutes with the squash.
  4. Cook bow tie pasta according to package instructions; reserve some pasta water before draining.
  5. In a pot over medium heat, sauté garlic in butter before adding sausage and roasted veggies.
  6. Combine everything in the pot with drained pasta; adjust seasoning with smoked paprika, salt, and pepper.
